While Jersey Knight Hybrid Asparagus is hardy enough to perform well, even in clay soil and to resist rust fungus, it's still tender, sweet and delicious. These predominantly male plants produce little to no seed, which ensures 2 or 3 times the average yield of Jersey asparagus. The premium-quality spears grow up to 7 in. to 9 in. and up to 3/4 in. thick. While they're ready to harvest early in the season, the spear tips will stay tight for weeks to come. Whether steamed, sauteed or chopped up in bright green spring salads, asparagus is 1 of the most antioxidant-rich veggies in your garden.
